Mixture of two or more liquids that are normally immiscible (un-blendable). The term emulsion is used when both the dispersed and the continuous phase are liquid. In an emulsion, one liquid (the dispersed phase) is dispersed in the other (the continuous phase). Examples of emulsions include vinaigrettes, milk, and some cutting fluids for metal working. The word "emulsion" comes from the Latin word for "to milk", milk being (among other things) an emulsion of milk fat and water. Types of emulsion: 1.o/w emulsion oil is dispersed phase while water is dispersion media. 2.w/o emulsion water is dispersed phase while oil is external phase.
